These are buttery Puerto Rican Shortbread cookies and so easy to do it takes about 30 minutes to make. My mom tried these out and most of them were gone the next day. Here is how to make this tasty treat.
Ingredients:
1/2 cup unsalted butter, at room temperature
1/2 cup shortening or lard
1/2 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon salt
2 1/4 cups all-purpose flour
Guava paste for filling
Instructions:
- Preheat oven to 350 F. Line a cookie sheet with silicone mat, parchment paper, or use an ungreased cookie pan.
- In a large bowl, combine butter, shortening and sugar until light and fluffy.
- Stir in vanilla extract, salt and flour until well combined.
- Divide dough into small balls, and create an indent in each cookie with your thumb.
- Add guava paste (about 1/2 inch cubes)
- Bake for about 15-20 minutes or until edges are golden.
- Cool on cookie sheet for 5 minutes before removing to wire rack to cool completely.
